After growing sick of my own granola I decided to try a new recipe and I have to say this is my new favorite. Oh cardamom how I love you! And the granola was surprisingly lite with the olive oil. Give it a try: Olive Oil Granola with Dried Apricots and Pistachios. My only alteration was omitting the 3/4 cup of maple syrup, yikes this isn't supposed to be frosted flakes! And I'd probably cut the brown sugar back even more.
